No single temperature belongs to every green, white, oolong, black, dark, or herbal tea. Processing, leaf size, roast, age, ratio, vessel, water, and steep time all matter. Begin with the producer's instructions when available. Use a family range only when the packet has gone mysteriously silent.

Then taste. A thermometer gives a repeatable number, not a certificate that you enjoyed the cup.

The conversions are recomputed with °F = (°C × 9 ÷ 5) + 32. Thus 70°C is 158°F, 80°C is 176°F, 85°C is 185°F, 90°C is 194°F, 95°C is 203°F, and 100°C is 212°F.

Ratio and time travel with temperature

Use about 2.5–3 grams tea per 250 millilitres water as a broad Western-style starting point. Steep green or white tea one to three minutes, oolong two to four, and black tea three to five, then follow the specific leaf.

This gives three linked controls:

A weak cup is not automatically too cool. It may have too little leaf. A harsh cup is not automatically too hot. It may have steeped six minutes while everyone looked for biscuits.

Sencha provides a documented example

The Japan Tea Central Public Interest Incorporated Association publishes a sencha method using 3 grams leaf and 120 millilitres water per person, cooled to 70–80°C/158–176°F, for one to two minutes.

Its explanation is taste-based: hotter water extracts bitter and astringent catechins and caffeine more readily, while amino-acid-derived savoury character remains available at lower temperatures. Lower temperature changes the balance; it does not create a caffeine-free drink.

The same source treats gyokuro differently—lower temperature, less water, and more concentrated leaf—and roasted hōjicha differently, using boiling water for a short steep. “Japanese green tea” is therefore not one setting wearing several labels.

Green tea: start cooler, then listen

For an unknown delicate green tea, begin around 75–80°C/167–176°F for two minutes. Use the maker's ratio. Taste when warm enough to perceive clearly.

If grassy aroma is pleasing but the finish is rough, reduce time by 20–30 seconds or temperature by 5°C/9°F. If the cup is thin and quiet, add leaf before leaping to boiling water. More leaf can increase aroma and body without the same extraction profile as much hotter water.

Roasted, pan-fired, tightly rolled, or robust green teas may prefer hotter water. Match the specific tea, not the colour name.

Second infusions often use slightly hotter water or shorter time because leaves are already warm and hydrated. Record what worked.

White tea varies more than its delicate reputation

Some white teas have large downy buds and gentle processing; others contain mature leaves, age, compression, or roast. Start around 80–85°C/176–185°F for a young delicate loose white tea, but use hotter water for a robust compressed or aged version when the producer recommends it.

Large leaves make teaspoons unreliable. Weigh them. A spoon may hold two grams of one tea and a small botanical gazebo of another.

If the cup tastes flat, extend time or add leaf before raising temperature. If drying, shorten time. White tea can tolerate multiple infusions, with each adjusted by taste.

Oolong needs a range because oolong is a range

Oolong includes lightly oxidized floral rolled teas, darker oxidized strips, roasted styles, and aged examples. Begin 85–95°C/185–203°F for greener aromatic oolong and 90–100°C/194–212°F for darker or roasted leaves.

Preheat the vessel when using small repeated infusions so water temperature does not collapse on contact. For a large Western pot, preheating also improves repeatability, but handle hot ceramic carefully.

If aroma is strong and flavour hollow, increase leaf or time. If roast dominates harshly, lower temperature or shorten the first steep. Several short infusions can show the leaf changing more clearly than one long extraction.

Black tea often wants near-boiling water

Many breakfast blends, small-leaf black teas, and teas intended for milk use 95–100°C/203–212°F for three to five minutes. A delicate whole-leaf black tea may be clearer at 90–95°C/194–203°F.

Boil fresh water, then pour promptly when near-boiling is intended. Repeated hard boiling changes dissolved gases and concentrates minerals through evaporation, which may flatten taste. There is no need to make the kettle rehearse its scene five times.

If adding milk, brew for the strength needed rather than steeping indefinitely. More leaf often gives a fuller cup with less roughness than extreme time.

Herbal infusions are not one plant

Peppermint leaf, chamomile flowers, roasted barley, hibiscus, ginger, fruit pieces, and medicinal herbs differ. Many food-grade herbal infusions use boiling water and five or more minutes, but the product label is the primary instruction.

“Natural” does not mean appropriate for every person. Herbs can cause allergies or interact with medicines, and pregnancy or health conditions may change suitability. Products marketed for treatment are beyond a casual tea guide.

Use clean equipment and potable water. Refrigerate cold-brewed or leftover infusions promptly rather than leaving wet plant material at room temperature all day.

How to measure water temperature

A temperature-controlled kettle is convenient but should be checked if results seem strange. An instant-read thermometer works in a heat-safe measuring vessel. Keep fingers clear of steam and do not rest a probe against the hot metal base.

At sea level, water boils near 100°C/212°F; boiling temperature decreases with elevation. A kettle cannot reach 100°C at high altitude merely because the tea chart feels strongly about it. Use freshly boiled water as the local maximum and adjust taste through ratio and time.

Preheating a thick pot reduces heat loss. A thin glass cup loses heat differently. If precision matters, measure in the actual vessel after pouring.

Cooling without pretending to know exact degrees

Pouring boiling water into another vessel and waiting will cool it, but no universal “one minute equals ten degrees” rule survives different rooms, volumes, and ceramics.

Without a thermometer, use a repeatable method: same kettle volume, same room-temperature cup, same transfer, same wait. If the cup improves, you have a method even without an exact temperature claim.

Troubleshoot by taste

For bitter, astringent, or harsh tea:

  1. shorten steep time;
  2. lower temperature by 5°C/9°F;
  3. verify leaf weight; and
  4. consider softer or filtered water suited to the tea.

For weak, watery, or hollow tea:

  1. increase leaf by 0.5 gram per 250 millilitres;
  2. extend time in 15–30 second steps;
  3. raise temperature by 5°C/9°F; and
  4. preheat the vessel.

Do not change all four at once. Tea is cheaper to debug when it leaves notes.

Caffeine does not obey a colour chart

Tea caffeine varies with plant material, growing and processing, leaf grade, ratio, temperature, time, and number of infusions. Green tea is not automatically lower in caffeine than black tea, and a brief rinse is not dependable decaffeination.

The FDA advises considering all caffeine sources and consulting a health professional about limits during pregnancy, breastfeeding, medicine use, health conditions, or sensitivity. If reliable reduction matters, choose a product labelled decaffeinated and understand that trace caffeine may remain.
